I hope you are having a great summer!  We are laying low this year, no vacations or anything crazy.  Pool time, water balloons and play grounds are about it!  It is nice to enjoy some time that doesn’t require a lot of running around.

If you saw my post on Kiwi Puffs With Amaretto Reduction Drizzle you will know what a hit they were!  My son Max is not a fan of Kiwi.  He is very particular on textures and he thinks slimy is yucky!  He was jealous of the yummy looking Kiwi Puffs but refused to partake.  Being the nice mommy that I am, lol, I made him a special “Strawberry Puff”. He loved it  DEVOURED IT!  Hooray!  Everyone was happy!

To make the Strawberry Puffs 

Kiwi puffs

Defrost 1 sheet of puff pastry according to the package.

Cut the pastry along the folds to make 3 rectangles.  Cut the rectangles to form 3 equal squares.  You should have 9 pieces.  I like to take 1 of the nine squares and cut it into decorative toppers.  See above.

Bake the pastry at 400° for 10-15 minutes until puffed and golden brown.  Keep an eye on the smaller pieces they will cook a little faster.

While the puff pastry is baking, whip up some homemade whipped cream. In a standing mixer add a pint of heavy whipping cream and whip on medium-high speed until stiff peaks form. (about 5-7 minutes) When peaks form, add 1/4 cup of powdered sugar. Mix in until blended. Now add 1 teaspoon of pure vanilla extract and mix until blended together.

To assemble the Strawberry Puffs

Take 1 square of puff pastry and gently separate it in half to make a top and bottom. Spread a heavy layer whipped cream on the bottom half and then top with 2-3 slices of strawberry. Replace top half of the puffed pastry and top with a dollop of whipped cream and 1 slice or 1 whole strawberry.  Drizzle with chocolate syrup.

You can mix some chocolate syrup into the whipped cream if you want a chocolate cream.  Add a dallop of whipped cream to the plate and top with decorative cut-outs.

Enjoy strawberry shortcake style by omitting the chocolate syrup!
