Strawberry Pineapple Upside Down Cupcakes 

My husband has been requesting Pineapple Upside Down Cake for a while now.  I have been really good at attempting to make it for him.  The problem being, I buy a can of pineapples and poof- they disappear!  This happened a few times before I realized I needed to buy more than one can and hide a can for the recipe!

Strawberry Pineapple Upside Down Cupcakes 

I have 3 reasons why I used strawberries 🍓 Instead of the commonly used Marachino cherries 🍒:
A) Strawberries add a bigger pop of color 
B) Fresh Fruit is delicious 
C) Marachino Cherries GROSS ME OUT!!!
Working in the restaurant business for so long really made me despise those cherries.  Parents would literally request bowls full of Marachino Cherries as a “be quite” bribe for their kids.  I can’t tell you how many times I was asked to retrieve “those cherries from the bar”.  They are sticky, rubbery, not really a cherry anymore disgustingness.  
If you like them, please use them.  No judgement here (unless you give your kid a bowl full) lol

I decided to make cupcakes because I had intentions of popping these one by one into my husbands lunches for work.

 I thought wrong!  They disappeared as fast as the cans of pineapple! 🍍🍍🍍.  I know now that I need to double the recipe.  6 jumbo cupcakes are not enough for my family of 4!

These strawberry pineapple upside down cupcakes are really simple to make and are a really tasty treat.  I hope you enjoy these as much as we do!

Strawberry Pineapple Upside Down Cupcakes
Yields 6
Just like the traditional recipe except in cupcake form. Topped with whipped cream and a strawberry.

For the topping
  1. 6 strawberries
  2. Whipped cream
For the cake
  1. 1/2 cup brown sugar, packed
  2. 1/4 butter, melted
  3. 6 pineapple slices, reserve juice
  4. 2 eggs, separated
  5. 1/2 cup granulated sugar
  6. 3/4 cup all purpose flour
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
  9. 1/4 cup pineapple juice
Instructions
  1. Pre-heat Oven to 375°
  2. Melt butter in medium sized bowl
  3. Add brown sugar to the melted butter
  4. Mix well
  5. Lightly grease jumbo cupcake pan
  6. Evenly add the butter mixture to cupcake pan
  7. Place 1 slice of pineapple ring on top of the butter mixture
  8. Set aside
  9. In a stand mixer beat the yolks until thickened and lemon yellow colored
  10. Add granulated sugar and beat well
  11. Add flour, baking powder and salt to the egg mixture and mix well
  12. Add pineapple juice and mix well and set batter aside
  13. In a clean bowl beat egg whites until stiff peaks form
  14. Fold egg whites into the batter until fully incorporated
  15. (If substituting Marachino cherries add 1 cherry to the center of each pineapple ring)
  16. Pour batter evenly into the prepared cupcake tins
  17. Bake for 15 minutes (until toothpick comes out clean)
  18. Remove from the oven
  19. Let cool for 2 minutes
  20. Place large tray over cupcakes and invert onto tray
  21. Top with whipped cream and a strawberry
Notes
  1. Top with strawberries and whipped cream

  3. I am with you, Michelle, on the cherries! It is amazing that the children didn’t turn red from consuming so much red food dye! I think strawberries are a delicious update. No wonder these didn’t last long at your house!
