Strawberry Cream Pie

Have you ever asked a birthday person what kind of dessert they want to celebrate their special day and they respond with “I don’t know maybe strawberry or chocolate something?”   That was my sisters response and so the kids and I decided to make a dessert with both flavors!

Strawberry Cream Pie was our choice.

We decided to have a chocolate crust with strawberry middle.  To make it extra special the kids decided chocolate covered strawberries would be a great topper.  As you can see from the photo above the kids were in charge of dipping the strawberries 😜

The filling consists of homemade whipped cream with fresh chunky strawberry purée added.  We found some cute chocolate curls to complete the decorations.

Let me say great work for a 6 and 8 year old!  It was light, creamy a hint of strawberry and the chocolate crust was the perfect amount of chocolate to compliment the pie.

To make Strawberry Cream Pie 

I like to start by dipping the strawberries first.  Any melted chocolate will work.  We chose white chocolate to keep it a bit lighter and so the red sprinkles would show up better.


The kids had a blast making these!

Next you can either make your own Oreo crust or buy a store bought version.  I bought the crust because the store was out of the Oreo crumbs.


Next you will need to make your whipped cream.  Any recipe will work.  For mine I used a pint of whipping cream, 1/4 cup confectioners sugar and 1 1/2 teaspoons of pure vanilla extract.

After you have stiff peaks food in 1/4 cup strawberry purée.  I made mine my blending about 5 medium strawberries with 3 tablespoons of apple juice and 2 tablespoons of granulated sugar in a blender.  Then I chopped 2 more strawberries into small pieces and mixed into the purée.


Now fill your crust with the strawberry whipped cream mixture.


At this point I put the pie into the refrigerator for 3 hours to firm up.

Once the pie is firm it’s time to decorate.


Top with the strawberries first.  Then the Chocolate curls.


And there you have it!  Strawberry cream pie!  Quick and easy no bake dessert!

When I first looked at the top photo, I couldn’t figure out how you got a stripe of white chocolate on the middle of the strawberries. Then I realized that there was red sugar on the bottom! 🙂 Sounds like a celebration pie to me!
