Back Yard BBQ Season Is Finally Here! Time For Pasta Salad
I am so very happy that May is here!
Here in Colorado, May means we are pretty sure there won’t be any more huge snow storms. We can start our gardens and get our decks ready for a season of use. I was in Costco today and about every 2 out of 3 shopping carts had garden plants in them!
Mother’s Day is quickly approaching and there will be many families that take their lovely Mother out for a big brunch or to a fancy steakhouse dinner. Well, for my family, it means TIME TO FIRE UP THE GRILL! I am a very casual girl, blue jeans make me happiest. The thought of having to go out on Mother’s Day, dress up and sit in a lobby with angry diners waiting past reservation times appalls me.
I would much rather sit back in the comfort of my own home with a big bold glass of Cabernet as my husband cooks up something tasty on the grill.
I love a good garden salad but pasta salad is so packed full of all sorts of variety and tastiness!
So easy to make, pretty to look at and delicious to eat.
Here’s what you’ll need:
Rotini Pasta. I love the way the layers “grab” the dressing. I also like to use the Garden Rotini because the colors make it so pretty. You can substitute for any pasta you like as long as it’s bite sized. Make sure to cool before mixing the ingredients in.
For this Pasta Salad recipe I use:
Garden Rotini, Italian dressing, tomato, broccoli, red bell pepper, mozzarella, ham, green onion, olives, mini pepperoni, salt and pepper.
If you don’t like olives….leave them out! Like green bell pepper better? Substitute the red bell. The salad is going to be awesome because you can tweak it to your liking.
Mix all ingredients into a large serving bowl or Tupperware and pop it in the fridge for a couple of hours and enjoy!
