Homemade Marshmallow Fluff

Marshmallow Fluff.  I have always wondered how to make such a strange treat!  It is so useful in so many desserts.  It acts as a bonding agent because it’s so sticky!  It’s like food glue!

I surfed the web and found several recipes for this amazing substance.  I took a bit from here a bit from there and Shazam! (I’ve always wanted to say that in person, but I would feel weird!).  Here’s the final product!

Marshmallow fluff

Oh so gooey goodness!  Oh so easy to make!

For the syrup you will need:

3/4 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/8 teaspoon salt

For the base of the fluff you will need:

2 large egg whites, room temperature
1/4 teaspoon cream of tartar
1 1/2 teaspoons vanilla extract

To make the syrup:
Mix the sugar, corn syrup, water, and salt in a small saucepan over high heat. Bring to a boil, stirring often, until the mixture reaches 240°F on a candy thermometer.
To make the fluff base:
Add egg whites and cream of tartar to a stand mixer bowl with a whisk attachment.
Whip the egg whites to soft peaks on medium speed. You need to have the egg whites whipped and ready for the syrup mixture when it is done.  
When the syrup reaches 240°F, reduce the mixer speed to low and slowly drizzle about 3 tablespoons of syrup into the egg whites to warm them. Adding too much syrup right away will cook the egg whites.  Slowly drizzle in the rest of the syrup. Increase the speed to medium high and whip until the marshmallow fluff is stiff and glossy, about 8 minutes. Add the vanilla and whip 2 minutes more.
