This is serious Macaroni Salad!

I don’t know how to put into words how amazing and delicious this salad is!  

My family and I attended a party and one of the guests brought this salad.  I had to find out who made it because I NEEDED the recipe.  After a little hunting I found the lady who made it.  She said “I can’t take credit, I got it from that guy on QVC. It’s called The All American Macaroni Salad.”

The next day I googled it.  It was David Venable’s recipe.

I made it, but as I was preparing it, I had to tweek it a bit.  I felt the recipe called for way too much dressing.  I adjusted the dressing. I had some leftover Honey Baked Ham so I used that instead of deli meat.  I love using mini shell pasta instead of macaroni noodles.  I love the way the shells act as little cups to hold onto the fillings!😄

I really couldn’t stop eating this macaroni salad!  If I walked into the kitchen for any reason I found myself grabbing a fork to dig in!  It was out of control.  I almost didn’t put it out at dinner because I wanted it all for myself!  I ended up sharing 😋 but I tucked the remaining salad in the back of the fridge in hopes that no one would find it!  OK maybe I have a little problem but it was seriously that good!

I hope you enjoy this Macaroni Salad as much as I do!

Macaroni salad

For the salad you will need:

3 cups mini shell noodles, cooked and cooled
1/2 cup red onions, finely chopped 
1/2 cup frozen peas, thawed or fresh and shucked 
1/2 cup red bell pepper, finely chopped 
1/2 cup grated carrots 
2 eggs hard boiled, chopped 
1/2 pound ham, finely chopped

For the dressing:

1/8 cup sour cream 
1/4 cup mayonnaise 
1 Tablespoon Dijon mustard 
1 Tablespoon white wine vinegar 
1/4 teaspoon garlic powder 
1/2 teaspoon black pepper 
1 teaspoon salt 
1 1/2 teaspoons granulated sugar

Mix together the mini shells, red onion, peas, red bell pepper, carrots, eggs and ham in a large bowl.  Mix together the sour cream, mayonnaise, Dijon mustard, white wine vinegar, garlic powder, black pepper, salt and sugar in a medium bowl.  Toss the sauce and salad ingredients together and chill for 1-2 hours before serving.

For the salad
  1. 3 cups mini shell noodles, cooked and cooled

To make Macaroni Salad
  1. Mix together the mini shells, red onion, peas, red bell pepper, carrots, eggs and ham in a large bowl. Mix together the sour cream, mayonnaise, Dijon mustard, white wine vinegar, garlic powder, black pepper, salt and sugar in a medium bowl. Toss the sauce and salad ingredients together and chill for 1-2 hours before serving.

  1. Caution- seriously addictive 😉

    1. Kristin- with 4 girls in your life YOU DO NEED THIS! You also need to hide it in the back of the refrigerator and DON’T SHARE! Lol. Sharing is for kids- not adults! 😀
