Garlic Dill Parmesan Potatoes 

These potatoes remind me of Boston Chicken back when it was Boston Chicken. 😀 

I haven’t eaten at that establishment since the 1990’s  I’m not sure why- other than location.  I moved and there wasn’t one around.  I still crave their new potatoes.  So yummy!  I had fresh dill in the garden so I decided to try to make up a batch from memory of the taste.  

I was shopping at Sprouts and discovered a sale on these rainbow fingerling potatoes.

For this recipe I used the red and yellow only, I was reserving the purple for my sister’s birthday when I made Fool Proof London Broil.  There always seems to be less purple potatoes in the bag.  It’s like finding treasure in the chest.  There is something that makes me smile about a purple potato maybe because they are so pretty or maybe because they are unique.  I fell in love with Hawaiian Sweet Potatoes years ago and seem to have such a hard time finding them.  They are seasonal and I must think about them in the off season!  

Back to the recipe😀

I quartered some rainbow fingerling potatoes and boiled them to just tender.  I drained them and tossed them in a medium skillet with butter, garlic, dill, salt and pepper.  I cooked them over a medium-high heat until the garlic was tender.  Then I added a Parmesan cheese blend and tossed with the potatoes until blended.

They turned out just as I hoped.  They were creamy and flavorful.  Rich and delicious!

Garlic Dill Parmesan Potatoes will make a great accompaniment to any protein you choose.


I chose to serve mine with Panco Crusted Pork Topped with Jalapeño Cream Sauce.


 They were so good that I also made them with Fool Proof London Broil

Garlic Dill Parmesan Potatoes
Serves 4
Creamy and flavorful. Rich and delicious. These potatoes make a great side to most proteins.
Write a review
  1. 10 Rainbow Fingerling Potatoes, quartered
  2. 1/8 cup fresh dill, chopped
  3. 4 cloves garlic, peeled and sliced
  4. 1/8 cup Parmesan Cheese Blend, powdered
  5. 3 tablespoons butter
  6. Pinch of Salt and pepper, to taste
  1. Rinse and quarter the potatoes
  2. Add to a pot of boiling water
  3. Cook until just tender
  4. Drain
  5. In a large saucepan heat butter over medium heat until melted
  6. Add the sliced garlic cook for 1-2 minutes
  7. Add the potatoes and dill
  8. Cook for 3-4 minutes until potatoes start to brown, stirring occasionally
  9. Add Parmesan and cook 1-2 minutes longer stirring to evenly incorporate all ingredients
  10. Serve with your favorite dinner
