Easy Peasy Lemon Squeezy Dream Pie- YUM!
Have you ever taken a bite of something and it immediately catapults you back several years in your past?
This Easy Peasy Lemon Squeezy Dream Pie sends me back to my childhood summers. My family spent a lot of time in our back yard. My father hand built a gorgeous deck that was surrounded by silver lace ivy. Summer nights were great on our deck. We usually ate dinner out there followed by some sort of delicious treat.
Easy Peasy Lemon Squeezy Dream Pie was one of my favorites. I would look forward to that first bite. The tart, light, cool fluffiness paired with the ever so tasty graham cracker crust. AMAZING!
Here’s the best part! Dream Pie is easy peasy to make!
If you want to add a little homemade touch, simply make the crust from scratch.
For the homemade crust:
Make 1 1/2 cups of graham cracker crumbs (about 10 full crackers)
You can either blend them in a food processor, or place in a plastic bag and crush them with the flat end of a meat tenderizer.
Melt 6 Tablespoons of butter.
Measure 1/3 cup of sugar.
Place all three ingredients in a large bowl and mix well.
Place the crumbs in your baking dish and press firmly and evenly into the bottom and sides.
You can use your fingers, any kitchen tool that is flat, like a measuring cup or as pictured a tart shaper. I like the tart shaper because it is small enough to press up the sides easily.
Pop it in the refrigerator for an hour or so and there it is! Easy enough!
If you want it super easy peasy, buy a pre-made graham cracker crust. (As shown above😏)
For the Easy Peasy Lemon Squeezy Dream Pie filling:
Now, for the next step you will need 2 lemons, 3 cups or [1] 8oz container of whipped topping (we use cool whip. Why? Because it tastes good!) and 2 1/4 cups of lemon yogurt (we use [3] 6oz containers yoplait. Again, it tastes good!)
You will need a large bowl, beaters or mixing spoon, measuring spoons and a zester or grater. You will need a spatula, knife and a cutting board.
Let your whipped topping defrost on the counter as you prepare the lemons.
To prepare the lemons, zest the rind of one lemon. What is zest? It is fine pieces of the rind. Easily obtained from the smallest grater section of the grater. There is even a special tool made specifically for zesting. You will need 2 Tablespoons of zest for the filling and 2-3 teaspoons for the top.
Juice the lemon you took the zest from. Make sure to remove any seeds. You will need 2 Tablespoons for the filling.
Take the other lemon and slice it very thin, almost transparent. You can also use a mandolin on the thin slice setting. These will be for the decoration on top.
In a large bowl add the whipped topping, lemon yogurt, lemon juice and 2 Tablespoons of lemon zest.
Mix on low speed until blended. Or mix by hand.
Spread filling into crust. I use a spatula, that way not one bit of deliciousness is left behind!
Once filled, sprinkle the remaining 2 teaspoons of lemon zest over the top and add the lemons in any pattern you like.
Cover and refrigerate for about 4-6 hours, until the filling firms up.
If you want to make mini pies this recipe will fill approximately 10 mini pies or [1] 9-10″ pie.

Ingredients
- 3 cups of whipped topping (CoolWhip 8oz container)
- 2 1/4 cups of lemon yogurt (3 6oz containers of yoplait)
- 2 Tbl + 2-3 tsp lemon zest
- 2 Tbl lemon juice
- 1 lemon thinly sliced
- 10 full graham crackers= 1 1/2 cups
- 6 Tbl butter, melted
- 1/3 Cup sugar
- Or 1 store bought graham cracker crust
Instructions
- Mix graham crackers, melted butter and sugar together.
- Press firmly into the bottom and sides of a pie dish.
- Place crust into the refrigerator for an hour or longer.
- Mix whipped topping, lemon yogurt, lemon juice and the 2 Tablespoons of lemon zest together either by hand, or by electric beaters.
- Fill the pre made crust with the filling.
- Sprinkle the remaining lemon zest over the top.
- Decorate the pie with the thinly sliced lemons.
- Cover tightly.
- Place pie in refrigerator for approximately 4-6 hours until the filling is firm.
