Who wants to try Chorizo Jack Stuffed Mushrooms? 

I hope life is good in your neck of the woods🙂  It has been a crazy busy time here with the end of the school year, the end of my son’s football season (*braggie moment* his team was undefeated AND he got MVP which equals 2 trophies and a medal!😝) Also, the end of my daughter’s dance (*braggie moment #2* she was beautiful on stage and got to dance in 3 parts of the recital!😍)

Anyhow, I just posted my blog on Stuffed Poblanos With Chicken And Chorizo.

I had some leftover chorizo and Monterey Jack cheese so I thought to myself…I should stuff something else!  What’s going to be delicious with chorizo and Jack cheese? 

I started thinking and remembered that my husband talks about these sausage stuffed mushrooms that his father makes.  They are famous in his family.  Anytime they get brought up in conversation his family makes goo goo eyes at the memory.  (I actually asked him to make them on his last visit and they were amazing!). This inspired me to make stuffed mushrooms!  

Chorizo has so much flavor and spice that I decided to keep it simple.  Four ingredients simple!  Chorizo, Monterey Jack cheese, green onions (from my garden🙃) and white button mushrooms.

To make Chorizo Jack Stuffed Mushrooms

Chorizo stuffed mushrooms

Mix 1/4 pound chorizo, 1/2 cup Monterey Jack cheese and 1/8 cup chopped green onions.

Chorizo Jack stuffed mushrooms

Stuff mixture into 7 medium white button mushrooms.  Filling should be rounded.

Bake in lightly greased baking dish at 375° for 30-40 minutes until mushrooms are cooked through.

This recipe for Chorizo Jack Stuffed Mushrooms is super simple and super flavorful.  The spice from the chorizo mixed with the creaminess of the Jack cheese is so complimentary to each other.  Each bite is fully balanced and delectable.

Chorizo Jack Stuffed Mushrooms
Spicy, cheesy, yummy! 4 ingredient stuffed mushrooms with a ton of flavor!
Write a review
  1. 7 medium white button mushrooms
  2. 1/4 pound spicy chorizo
  3. 1/2 cup Monterey Jack cheese
  4. 1/8 cup chopped green onions
To stuff
  1. Remove stems from each mushroom.
  2. Mix chorizo, cheese and green onions together in a medium sized bowl.
  3. Stuff each mushroom with equal parts of filling. (Filling should be rounded.)
To Bake
  1. Bake at 375° for 30-40 minutes until the mushroom is cooked through.
  2. Remove and let rest for about 5 minutes before serving.
  1. Double the recipe for a full container of mushrooms.
  2. Stems can be chopped and added to filling mixture, saved for another recipe or put in your compost pile.
