Caprese Lasagna Roll Ups 

I have such an abundance of basil that these Caprese Lasagna Roll Ups were a perfect fit! 😀 

There is something so divine about Italian food.  The richness of the tomatoes, the creaminess of the cheese and the spices….holy cow- I love the spices!  Comfort food at its finest!

I make these every year because the tomatoes and basil straight from the garden are to die for!  There’s so much flavor that comes from the freshly picked vegetables.  Makes me wish I had a cow so I could make the mozzarella from scratch too! 😜

To make the Caprese Lasagna Roll Ups:

I like to make the sauce but a jar would work fine.  I like the sauce to be on the chunky side.  

For the sauce:

In a medium saucepan over medium low heat, mix (1) 14.5 oz can diced tomatoes, 2 Tablespoons tomato paste, 1 Tablespoon minced garlic, 1 Tablespoon Italian seasoning and 1 teaspoon dried spicy basil.  Bring to a low boil and reduce heat to low.  Simmer on low while you prepare the roll ups.

For the roll ups:

Boil the lasagna noodles according to the package.  I used 8 noodles for this recipe.  It’s what I had on hand and it was actually the perfect amount for 2 adults and 2 kids.

Drain the noodles, let cool and line on waxed paper.

While the noodles are cooling mix the cheese filling.

Mix together 1/2 cup ricotta cheese, 1/2 cup grated Parmesan cheese, 1 egg, 1/4 tsp marjoram, 1/2 tsp dried parsley flakes, 1/4 tsp salt and 1/4 tsp black pepper. 

Spread the filling evenly over each noodle.

Now top with thinly sliced tomatoes,image

I like to use fresh mozzarella.  I happened to have these snack packs on hand and I thinly sliced them to place on top of the basil

Now evenly sprinkle with finely grated mozzarella cheese.  Sprinkle with black pepper.

Time to roll them up.  Start at one end and semi-tightly roll the noodle.

Place about a quarter cup of sauce on the bottom of the baking dish.

Place the roll seam side down in baking dish.

When all the rolls are in the baking dish pour the remaining sauce over the top of the rolls.

Bake at 375° for 15 minutes.  Remove from oven and top with 1/2 cup of grated mozzarella and sliced fresh mozzarella. Bake for an additional 10 minutes until the cheese is melted.

For the sauce
  1. (1) 14.5 oz can Diced Tomatoes

  7. 1/4 teaspoon salt
  8. 1/4 teaspoon black pepper
For the roll ups
  1. 8 lasagna noodles, cooked, drained and cooled
  2. 2 medium tomatoes, thinly sliced
  3. 32 fresh basil leaves
  4. 2 snack packs fresh mozzarella cheese
  5. 1/8 cup mozzarella cheese, grated
  6. Sprinkle of black pepper
For the topping
  1. 1/2 cup mozzarella cheese, grated
  2. 2 snack packs fresh mozzarella cheese
  3. Garnish with fresh basil leaves
Instructions
  1. Boil lasagna noodles according to the package
  2. Drain and cool noodles
  3. Line cooked noodles on waxed paper
To make the sauce
  1. In a medium saucepan over medium low heat add diced tomatoes, tomato paste, garlic, Italian seasoning and spicy basil. Bring to a low boil and simmer over low heat until you are ready to assemble the roll ups.
For the filling
  1. In a medium bowl mix ricotta cheese, Parmesan cheese, egg, oregano, marjoram, parsley, salt and pepper.
To assemble
  1. Spread filling mixture over noodles
  2. Layer noodles with tomatoes, basil, fresh mozzarella, grated mozzarella and sprinkle with black pepper
  3. Spread 1/4 cup of sauce in the bottom of baking dish
  4. Roll the lasagna starting at one end, roll semi- tight and place seam down in prepared dish
  5. Top with the remaining sauce
  6. Bake at 375° for 15 minutes
  7. Remove from oven and top with grated mozzarella and fresh mozzarella
  8. Bake 10 additional minutes
  9. Remove and top with fresh basil.
