Mushrooms, Bacon & Cream Cheese? I must be dreaming!
Do you love mushrooms?
I positively adore them!
My friend and I wanted to make stuffed mushrooms to accompany our steaks at a back yard bbq.
We toyed around with some ideas and here’s what we came up with.
Take your standard package of whole button mushrooms.
Remove the stems. (You can save them for another recipe, finely chop and add to the stuffing mixture or compost them. In this recipe I do not add them to the filling).
Clean them with a mushroom brush. Set aside.
Chop 4 green onions and 5 pieces of bacon.
In a medium bowl mix together, 1 8oz package of cream cheese with the chopped bacon and green onions. If you like Greek yogurt you can sub a Greek cream cheese and yogurt. I prefer the standard cream cheese.
Grease bottom only of baking dish. Stuff the mushrooms with rounded spoonfuls, equal portions, until all of the stuffing mix is used.
Next sprinkle the mushrooms with Italian breadcrumbs.
Bake in the oven at 400° until mushrooms have cooked through. About 15-20 minutes.
Serve as an appetizer or accompaniment to the entrée.
