Basil Lime Shortbread Cookies 

My sister and I took my mother to high tea at the famous tea room at the Brown Palace for Mother’s Day.  We had such a blast.  The building is a historic hotel in downtown Denver.  The stories in the building and it’s archive are incredible!

The tea was amazing.  They have several teas to offer.  They even have 2 of their own blends.  I think I drank 3 pots to myself because their master chefs have created the perfect food pairings for the tea.  

We had really amazing tea sandwiches, scones, dessert cakes and cookies.  The best part was we got to order seconds!  WOW!

 I fell completely in love with their Basil Lime Shortbread Cookies.  They had the perfect density and just the right amount of crunch.

 I have tried to mimic their cookies but can never get it exactly like the original recipe I tried that day.  The recipe I give you is the closest I have come yet and they are really tasty.

I figured now is a good time to share because my basil has overtaken me and I wanted to use some for the recipe before I make all my pesto and dehydrate the rest.

 I bring to you Basil Lime Shortbread Cookies!

Gather your fresh basil from your garden (or buy from the grocer) round up some lime and let’s get cooking!


I like to use a cookie scoop for uniform cookies.


Silpat baking mats are amazing!  Never had a stuck cookie!

As I mentioned above I have tried to duplicate a recipe that seems impossible to duplicate!  This version is the closest I have come yet.  If you don’t like a strong basil flavor you can reduce the amount of basil and they will still be delicious!


If you like chocolate you can omit the basil and lime and stuff each cookie with a Hershey kiss or 3-5 chocolate chips image

Basil Lime Shortbread Cookies
Melt in your mouth Shortbread Cookies kissed with fresh basil and lime.
Write a review
  1. 1 cup butter, room temperature
  2. 1/2 cup confectioners sugar
  3. 1/4 cup cornstarch
  4. 1 1/2 cups all purpose flour
  5. 1 tablespoon Lime zest
  6. 6-8 Fresh Basil Leaves finely chopped
  1. Whip the butter in a stand mixer with the whip attachment for 15-20 minutes *to achieve the melt in your mouth affect make sure you whip the full amount of time!
  2. Preheat the oven to 375°
  3. Gradually stir in the confectioners sugar, cornstarch and flour
  4. Beat on low speed for 1 minute and then turn to high for 3-4 minutes
  5. Mix in the lime zest and basil leaves until just incorporated
  6. Drop by spoon full 2" apart on Silpat mat or parchment paper lined cookie sheet
  7. Bake at 375° 12- 15 minutes until edges just start to brown
  1. You can omit the basil and lime for plain shortbread or "stuff" cookies with Hershey kisses or chocolate chips.
