I love potatoes.  I don’t think there is a Potato recipe that I don’t like!  I’m not picky on Potato varieties… I’ll eat them all!  Mash them- yep!  Fried?- totally!  Baked- you betcha!  Now mashed then baked – for sure!  The first time I made these, I made mashed potatoes as I always have, nice and creamy!  I liked the idea of baking instead of frying them because I don’t like the way the house smells with fried foods.  I also baked them while they were still warm.  All of these factors made them flatten during the baking process.  I made potato pancakes!  Lol  The family loved them but I wanted to conquer the baked Croquette!  Here’s what I found to be successful;

To Make Loaded Potato Croquettes 

Start by mixing up your favorite batch of mashed potatoes but make them a bit thicker than you would normally.  They can’t have too much moisture from milk and butter or they will become a mashed potato pancake!

Add your favorite “loaded” ingredients.  I used green onions, bacon and Cheddar.  Mix well.  Using an ice cream scoop, measure one full scoop for each Loaded Potato Croquette.  Place on foil lined sheet and refrigerate for 2 hours, until firm.

Prepare a bowl with Panco bread crumbs.  I like to mix in a Tablespoon of garlic powder because lets face it….potatoes and garlic are meant to be!

Roll your Loaded Potato Croquettes into the Panco crumb mixture.

Once the Loaded Potato Croquettes are covered in the Panco crumbs return to the foil lined pan.

Drizzle with melted butter.

Pop these beauties into the oven and bake at 400° for 10- 15 minutes until golden brown.

Once baked, garnish with Sour Cream and Parsley Flakes.
