Spicy Crock Pot Chili

Some like it HOT!


Well, we like our chili hot at my house!

Chili is such a great dish to create.
You can basically “wing it” each and every time.

Leftover taco meat?  Add it to the chili!
Do you have a jar of salsa that is getting close to the expiration? Add it to the chili!
Leftover steak?  Add it to the chili!
Day old coffee?  Pour it on in!

The possibilities are endless.

I am going to show you how to make an easy spicy crock pot chili.  This can also be cooked on the stove top for a quicker meal but I love to make it in the morning and not have to worry about it all day.

imageYou can use mostly canned food.

Or do you want to use some fresh ingredients?



You can use a packaged seasoning mix or mix up your own spices.

*hint- (when making your own mix) double, triple or even quadruple the seasoning mix.  Store in a small jar so you can have it on hand for the next time you make chili!

imagePlace ground beef, chopped onion and minced garlic in sauté pan.  Sprinkle with black pepper and a dash of salt.  Cook until browned.

imageIt should look something like this.  Drain and set aside.


Place beans, vegetables and spices in the crock pot.


Give it a good stir.


Add the beef mixture and stir it in.


Now it should look like this! (Mmmmm I can’t wait!)


Now turn to low and walk away for 3-10 hours!  Yes that’s right!  The beauty of chili is…. I can’t seem to overcook it!  The longer it cooks the more the flavors seem to soak in.  My husband tells me he loves my chili the second day the best.  As a matter of fact, I made this chili today but we had Italian sausages and spaghetti tonight!  Tomorrow is chili night!image

 Serve with chips, corn bread, crackers or just dig in!
Top with sour cream and cheddar cheese!
*hint- sour cream will help reduce the spice level.

As with most recipes you can tweak them to your liking.

Not spicy enough?  Add more!
Too spicy?  Start with less!

Get creative with the end result.  Have chili night then have chili dog night in a couple of days.  Stuff in bell peppers with rice. Freeze the leftovers and make a chili casserole later, just add noodles or rice.

Spicy Crock Pot Chili


    For chili you will need:
  • 1 pound ground beef
  • 1/2 yellow onion, chopped
  • 2-3 cloves garlic, minced
  • 2 cans of chili beans- your choice (I like to mix and match) undrained
  • 1 small can diced hot jalapeños, undrained
  • 1 small can diced green chilies, undrained
  • 1 can tomato sauce (or sub with a jar of salsa)
  • 1 can diced tomatoes, undrained
  • 1 package spicy chili seasoning
  • For Fresh ingredients:
  • Substitute the canned diced tomatoes for 2-3 med-large fresh
  • Substitute the canned jalapeño for 2 fresh
  • Add 1/2 of a bell pepper of any color
  • For homemade seasoning you will need:
  • 1 Tbl chili pepper
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp sugar (or a small handful of chocolate chips?)
  • 1 tsp salt
  • 1/4 tsp cayenne
  • 1/4 tsp black pepper


  • In a large skillet add the ground beef, onion and garlic.
  • Sprinkle with salt and pepper.
  • Brown over med-high heat.
  • Drain beef mixture and set aside.
  • Place beans, jalapeño, chilies, tomato sauce, diced tomatoes in crock pot.
  • Mix well.
  • Add seasonings and mix well.
  • Place lid on crock pot and cook for 3-10 hours (safe to eat at any time but the longer it cooks the more flavors combine)
  • Enjoy!
