Garden Veggie Muffins 

I love this time of year!  All the final produce from the garden calling to be made into delicious creations.  Today it happens to be Garden Veggie Muffins!

We are in Colorado and have been experiencing record highs but we’ve had 2 nights of frost.  This was enough to shut down the garden😢.  I quickly harvested anything that was ready and now I’m quickly trying to use everything before they go bad. 

Last year I did a lot of canning and it was an awesome winter of produce.  This year I’m not as organized and have decided to be quick about using them up in recipes that I can freeze.

For this recipe I use 3 delicious veggies from the garden. Zucchini, yellow squash and carrots harvested just before the first frost.

Maybe I should have called them “the middle of the rainbow muffins” look at those beautiful colors begging to be devoured!

I start off with the basic base recipe of egg, sugar, oil, flour, salt, baking soda, baking powder and cinnamon.

If you happen to be a health nut there are substitutions available.  Swap the oil for applesauce, swap the flour for whole wheat flour, swap the chocolate chips for raisins and the granola for whatever you think is more nutritious.   Personally,  I love the original recipe but feel free to mix it up and create what your heart desires.

After I mixed up the muffin base I add the 3 garden veggies.

Mix them up well.

Next, add some granola and chocolate chips and mix well.

Fill the paper lined pans 3/4 of the way full with the garden veggie muffin mix.

They’re that easy and that delicious!😀

When I made these muffins I thought I had a ton of Halloween muffin liners.  Turns out I had 10 and that meant (double lined) I had 5.  Luckily I had Christmas themed liners to finish off the batch! Lol

This recipe made 27 muffins.  I froze half and the family devoured the other half!  I love that the kids think these are yummy cupcakes!  I tell them the chocolate chips are “inside frosting”!

You can see all the cinnamon speckles and chocolate goodness mixed in these garden veggie muffins!  Yum!

Ingredients
  1. 2 eggs
  2. 1 1/2 cups granulated sugar
  3. 1 cup vegetable oil
  4. 2 cups flour
  5. 1 teaspoon salt
  6. 1 teaspoon baking powder
  7. 1 teaspoon baking soda
  8. 1 tablespoon cinnamon
  9. 1 cup zucchini, grated with skin on
  10. 1 cup yellow squash, grated with skin on
  11. 1 cup carrot, peeled and grated
  12. 1 cup chocolate chips
  13. 2 cups granola cereal
Instructions
  1. In a large bowl mix the egg, granulated sugar and oil until well blended.
  2. In a medium bowl mix the flour, salt, baking powder, baking soda and cinnamon until well blended.
  3. Slowly add dry mix to wet mix and stir until all the dry is incorporated.
  4. Add the zucchini, yellow squash and carrots
  5. Mix well
  6. Add the chocolate chips and granola
  7. Mix well
  8. Line muffin tins with papers and fill 3/4 full
  9. Bake at 350° for 20-25 minutes until toothpick comes out clean
