Cookie Brownie Bars 

Mmmm Cookie Brownie Bars!  

Have you ever had a day where making a dozen cookies seemed like too much effort?  Today was that day for me!

I’ve been back to work for a few months now and I’m still trying to get in the swing of things.  How do I get dinner on in a timely manner?  When do I do the laundry?  When do I bake cookies for my kids?  Lol

Today Bars sounded like a simple task!  Mix up some dark chocolate brownies and a batch of cookies….easy peasy right!?!

I decided to step these up one notch and add caramels and pecans to the layer where Brownie meets cookie.  

I started by preparing my baking dish.  Line a  9″ x 12″ x 2″ baking dish with tin foil and then lightly grease with cooking spray.  Preheat oven to 350°

Mix up your favorite Brownie recipe and add to the pan.  This is when I added the caramels and chopped pecans.

Last step before the oven, mix a double batch of your favorite cookie recipe and spread over the top.

 I find using margarine helps make them easier to spread.

Place layered mixture on a large baking sheet to catch any overflow in the baking process.

Bake most of the afternoon 😜 Kidding!  It does take a long time for these to cook.  Start checking around 50 minutes by gently shaking the pan. (At this point lightly lay a large piece of foil over the top to prevent additional browning of the cookie layer.)  When there is no movement in the middle of the Cookie Brownie Bar insert a toothpick, it should come out clean.

These bars are gigantic and rich.  If you like a less rich bar you can omit half the chocolate chips from the cookie recipe and skip the caramel layer.  Also- this recipe is enough to feed a small army so feel free to half the recipe 😃

For the Brownie
  1. 3/4 cup dark chocolate cocoa powder
  2. 1/2 teaspoon baking soda
  3. 2/3 cup butter, melted and divided
  4. 1/2 cup boiling water
  5. 2 cups granulated sugar
  6. 2 eggs
  7. 1 1/3 cups all purpose flour
  8. 1 teaspoon pure vanilla extract
  9. 1/4 teaspoon salt
For the Cookie
  1. 5 cups flour + 4 teaspoons water added to the flour
  2. 2 teaspoons baking soda
  3. 2 teaspoons salt
  4. 2 cups (4 sticks) butter, softened
  5. 1 1/3 cups packed brown sugar
  6. 1 1/3 cups granulated sugar
  7. 2 teaspoons vanilla extract
  8. 4 large eggs
  9. 4 cups dark chocolate chips
Optional
  1. 1 cup caramel bits
  2. 1/2 cup pecans, finely chopped
  3. Ice cream
Instructions
  1. Preheat oven to 350°
For the Brownies
  1. Stir together cocoa and baking soda in large bowl
  2. Stir in 1/3 cup butter
  3. Add boiling water; stir until mixture thickens
  4. Stir in sugar, eggs and remaining 1/3 cup butter
  5. stir until smooth
  6. Add flour, vanilla and salt; blend completely
For the Cookies
  1. In small bowl mix flour, baking soda, and salt.
  2. In Large bowl beat the butter, brown sugar, granulated sugar and vanilla until creamy.
  3. Add eggs and beat until smooth.
  4. Gradually add the flour mixture mixing well after each addition until dough forms.
  5. Mix in dark chocolate chips.
To assemble
  1. Line 9" x 11" x 2" pan with foil and lightly grease.
  2. Spread Brownies evenly in prepared pan
  3. Top with optional caramels and pecans
  4. Gently spread cookie batter over the top of the Brownie mixture
  5. Place prepared dish onto a large baking sheet to catch any overflow in baking process
  6. Bake for 50-75 minutes until toothpick comes out clean
  7. Let cool for 30 minutes before slicing
  8. Serve with ice cream or whipped cream, if desired
